Tre Stelle® Montasio Soup
Montasio cheese is also great in grilled cheese sandwiches and fondues!

Makes 2 - 4 servings
Ingredients:
50 g | 1/4 cup butter ½ medium onion, peeled and finely chopped 50 g | ¼ cup all purpose flour 400 mL | 1 ¾ Cups milk 600 mL | 2 1/4 Cups chicken or vegetable broth 80 g Tre Stelle® Montasio Cheese, grated 20 mL | 2 tbsp dry white wine salt and freshly ground black pepper to taste pinch nutmeg pinch freshly grated lemon zest 1 medium clove garlic, peeled and minced 100 g | 1/2 Cup fresh bread cubes, toasted
Instructions:
Melt butter in a medium saucepan; add onion and sauté until onion softens. Gradually add the flour and sauté while whisking for 5 minutes. Add milk and broth, stir to combine, cover and bring to a boil. Add the Montasio Cheese, white wine, salt, black pepper, nutmeg, lemon zest and garlic and simmer on medium-low for 10 minutes. Pass the soup through a sieve and pour into serving bowls; top with toast bread cubes.
